Born in Oaxaca,
raised with love.

El Sazón Oaxaqueño isn't a concept — it's a home. Every dish carries the weight of recipes passed down through generations of Oaxacan cooks, each one refined over decades of Sunday gatherings, festival nights, and quiet mornings grinding spices on a metate.

We brought that kitchen to Louisville because we believe the city deserves more than the same tired Mexican menu. Oaxaca is the soul of Mexican cuisine — seven moles, chapulines, black tortillas, ceniza cheese — and we're here to share it honestly, without shortcuts.

Every tortilla is hand-pressed. Every mole is stone-ground. Every visit feels like coming home to people who've been waiting for you.

What We Do Best

Signature Specialties

Mole Negro

Our black mole — the crown of Oaxacan cuisine. Over two dozen ingredients charred, toasted, and slow-simmered for hours until the sauce turns the color of midnight. Served over free-range chicken.

Tlayudas

The Oaxacan answer to pizza — a single large tortilla crisp-tossed on comal, slathered with refried beans, quasky cheese, cabbage, radish, and your choice of carne asada or chapulines.

Black Tortillas

Made from locally milled blue corn, these tortillas carry a deep, earthy sweetness that white corn simply can't match. Hand-pressed to order — warm, fragile, and unforgettable.

Mezcal & Mole

Small-batch Oaxacan mezcals paired deliberately with our moles. The smokiness of the agave spirit mirrors the charred complexity in every spoonful — a partnership perfected over years.

Chapulines

Toasted grasshoppers — a centuries-old Oaxacan delicacy — finished with garlic, lime, and sea salt. Crunchy, savory, and one of the most authentic experiences you'll find outside of Oaxaca.

Mole Verde

A vibrant green mole built from tomatillos, pumpkin seed, and gentle chiles. Bright, tangy, and deeply comforting — the kind of mole that makes you close your eyes and stay at the table longer.

Our bar features an curated selection of Oaxacan mezcals — from smoky espadín to floral tobalá — each one paired thoughtfully with the food. Our server will guide you, or simply let you explore at your own pace.
